Le Banneton for traditional, authentic, home-made bread
A round or crown banneton is a type of basket, traditionally made from wicker, which is used for doughs that are too soft or too wet, to enable them to retain their beautiful shape during the second leavening phase.
After shaping your dough, line the bottom and edges of the banneton with rye flour before placing it inside. The characteristic spiral pattern of this product will give your oven-baked or casserole bread that old-fashioned, artisanal look.

Some of our bannetons are equipped with linen cloths. Beyond the authentic look of this covering, it also has a practical aspect, preventing the dough from sticking to the sides of the wicker basket. It also allows the dough to breathe under optimal conditions, and to expel moisture during the priming phase, i.e. the second stage of rising.
