Fresh cake is a freshness preservative that also acts as a stabilizer. It maintains and preserves the softness of cakes, sponges, Savoy cookies, madeleines, pain de Gênes, roulés, macaroons, marzipan and other preparations. What’s more, it slows mold growth while improving texture and fondant.

Application: Without modifying the formulas, add Fresh cake at a dose of :

5 to 10% of the weight of flour used for madeleines or sponge cakes

250gr per kg of sugar for the cakes

Composition: Dextrose, lactose, glucose syrup
