Renowned for its floral and fruity notes, the Nacional Arriba bean is an ancient variety, grown according to sustainable, chemical-free agricultural practices. Harvesting is done by hand at optimum maturity, guaranteeing an aromatic profile faithful to its origins. After post-harvest treatment in Ecuador (fermentation, drying, sorting), the beans are processed in Switzerland by an artisan chocolatier, in keeping with tradition. This local processing ensures total mastery of aromatic profiles, thanks to gentle roasting, long conching and precise tempering. The result? Drops of 65% dark chocolate with a fluid texture, natural shine and even melting, perfect for all chocolate preparations: ganaches, mousses, coatings, moldings, drinks and fine pastries. On site, the beans undergo a rigorous process: Natural fermentation in wooden boxes for 4 to 6 days, triggering aromatic development. Controlled drying in the sun, to achieve an optimum moisture content (~7%) for stable preservation. Hand-sorted, retaining only top-quality beans. This processing is carried out in state-of-the-art centers set up locally to ensure traceability and create value in producer communities.
