65% dark chocolate drops – Ecuadorian tradition meets Swiss know-how
Our 65% dark chocolate drops are much more than a simple ingredient: they are true concentrates of know-how, terroir and quality. Made from cocoa beans of the Nacional Arriba variety, hand-harvested in Ecuador’s Del Oro province, these chocolate palets are specially designed for professionals and discerning amateurs alike.
Renowned for its floral and fruity notes, the Nacional Arriba bean is an ancient variety, grown according to sustainable, chemical-free agricultural practices. Harvesting is done by hand at optimum maturity, guaranteeing an aromatic profile faithful to its origins.
Handcrafted in Switzerland
After post-harvest treatment in Ecuador (fermentation, drying, sorting), the beans are processed in Switzerland by an artisan chocolatier, in keeping with tradition. This local processing ensures total mastery of aromatic profiles, thanks to gentle roasting, long conching and precise tempering.
The result? Drops of 65% dark chocolate with a fluid texture, natural shine and even melting, perfect for all chocolate preparations: ganaches, mousses, coatings, moldings, drinks and fine pastries.
Local, sustainable post-harvest processing
On site, the beans undergo a rigorous process:
-
Natural fermentation in wooden boxes for 4 to 6 days, triggering aromatic development.
-
Controlled drying in the sun, to achieve an optimum moisture content (~7%) for stable preservation.
-
Hand-sorted, retaining only top-quality beans.
This processing is carried out in state-of-the-art centers set up locally to ensure traceability and create value in producer communities.
A pure, committed composition
These drops consist solely of :
-
Cocoa paste (Ecuador – Nacional Arriba – Del Oro)
-
Sugar (Swiss origin)
-
Cocoa butter (ACP origin – Africa, Caribbean, Pacific)
-

A responsible, traceable model
Production is based on a short, ethical and traceable chain. The chocolatier works directly with the growers, in an approach that respects both people and nature. Local processing supports the Ecuadorian economy, while Swiss processing guarantees quality, consistency and craftsmanship.
